Course Requirements:
| 1. Attend all classes. |
| 2. Read assigned handouts. |
| 3. Prepare a research paper on an assigned topic. |
| 4. Prepare a quiz over the research paper. |
| 5. Complete two Nutriquest assessments. |
| 6. Take a quiz after each presentation. |
Grading Criteria:
Students will be graded on attendance (for points given, see next section), a research paper (to be determined), a prepared quiz over that research paper, taking quizzes, and 4 Nutriquest assignments.
1. The research paper will include researching and presenting scientific data on a nutritional topic. Papers should be 4 pages typed, double-spaced, standard margins, and include at least 2 internet resources and 4 scientific journal/book/article resources. Students will conduct a 10 minute PowerPoint presentation on their particular topic. Papers and presentations are worth 100 points.
2. The quiz should be typed, include at least 5 questions, and include a variety of assessment tools (multiple choice, fill in the blank, and short answer).
3. Quizzes taken will be worth 10 points each (50 points possible).
4. The Nutriquest assignment includes 2 components, and intake analysis and an energy expenditure assessment. The intake analysis involves documenting the food one eats for an entire day and then printing accompanying graphs and reports. The graphs and reports that need to be printed off include the pie chart that shows percentages of daily intake, the pie chart that breaks down fat intake, the food pyramid, the RDA histogram, and the Dietary Intake report (5 different comparisons). Accompanying those reports should be a personal evaluation of your eating program that includes answering the following questions: What am I doing well?
What do I need to adjust? What am I willing to change? By what date am I willing to change that behavior? Each intake analysis (2 due for the semester) is worth 50 points each.
The energy expenditure program entails documenting your daily energy expenditure (exercise and sedentary activities) for a 24 hour period. Print off a copy of your total caloric expenditure and then attach a personal evaluation that includes the following questions: What am I doing well? What do I need to adjust? What am I willing to change? By what date am I willing to change that behavior? Each intake analysis (2 due for the semester) is worth 50 points each.
Grading Scale:

| 343-391 | C |
| 294-342 | D |
| Below 294 | F |
